Vegan Wild Rice Salad Recipe

Main Ingredients
- 1 cup wild rice
- 2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- ¼ cup fresh parsley, chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Rinse the wild rice under cold water. In a saucepan, combine the wild rice and water. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the rice is tender and the water is absorbed.
2. While the rice is cooking, prepare the vegetables: dice the red and yellow bell peppers, red onion, and halve the cherry tomatoes.
3. In a large mixing bowl, combine the cooked wild rice, diced vegetables, and chopped parsley.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the rice and vegetable mixture and toss to combine.
5. Serve immediately or refrigerate for later. Enjoy!
