  • 4 zucchinis medium-sized
  • 1 cup cherry tomatoes halved
  • 1 cup bell pepper diced
  • 1 cup corn kernels fresh or frozen
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a mixing bowl, combine cherry tomatoes, bell pepper, corn, garlic, olive oil, salt, black pepper, and paprika.
  4. Fill the zucchini boats with the vegetable mixture.
  5. Place the zucchini boats on a baking sheet and bake for 30 minutes or until zucchinis are tender.
