Ingredients

  • 1 loaf Baguette cut into 4 pieces
  • 1 cup Carrots julienned
  • 1 cup Cucumber sliced thin
  • 1 cup Daikon Radish julienned
  • ½ cup Cilantro chopped
  • 1 unit Jalapeño sliced thin
  • ¼ cup Vegan Mayonnaise
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Sugar

Instructions 

  1. 1. In a mixing bowl, combine carrots, cucumber, and daikon radish with rice vinegar and sugar. Let it sit for 10 minutes.
  2. 2. Slice the baguette into 4 pieces and toast lightly in a pan.
  3. 3. Spread vegan mayonnaise on each piece of baguette.
  4. 4. Layer the pickled vegetables, cilantro, and jalapeño slices on the baguette.
  5. 5. Drizzle soy sauce over the vegetables.
  6. 6. Serve immediately and enjoy!
