Instructions
In a large pot, sauté onion, carrots, and celery until softened.
Add garlic and cook for another minute.
Stir in barley, zucchini, green beans, diced tomatoes, and vegetable broth.
Add thyme, rosemary, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 45 minutes, or until barley is tender.
