Ingredients 

Main Ingredients

  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup onions, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  3. 3. Add garlic and cook for another minute.
  4. 4. Add vegetable broth, potatoes, diced tomatoes, thyme, basil, salt, and pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 30 minutes, or until potatoes are tender.
  6. 6. Add frozen peas and corn. Cook for another 5 minutes.
  7. 7. Serve hot and enjoy!
