Main Ingredients
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup onions, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup frozen peas
- 1 cup frozen corn
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
1. Heat olive oil in a large pot over medium heat.
2. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
3. Add garlic and cook for another minute.
4. Add vegetable broth, potatoes, diced tomatoes, thyme, basil, salt, and pepper. Bring to a boil.
5. Reduce heat and simmer for 30 minutes, or until potatoes are tender.
6. Add frozen peas and corn. Cook for another 5 minutes.
7. Serve hot and enjoy!
