Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoon olive oil

Instructions 

  1. 1. Rinse quinoa and brown rice under cold water.
  2. 2. In a large pot, heat olive oil over medium heat.
  3. 3. Add diced carrots and bell peppers. Sauté for 5 minutes.
  4. 4. Add quinoa, brown rice, and vegetable broth. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 20 minutes.
  6. 6. Stir in frozen peas, salt, and black pepper. Cook for another 5 minutes.
  7. 7. Remove from heat and let it sit covered for 5 minutes before serving.
