Ingredients 

Main Ingredients

  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 large carrots chopped
  • 2 stalks celery chopped
  • 1 large tomato chopped
  • 8 cups water
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 2 leaves bay leaves
  • 1 bunch parsley fresh

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and garlic. Sauté until softened.
  2. 2. Add the carrots, celery, and tomato. Cook for another 5 minutes.
  3. 3. Pour in the water and add the salt, pepper, bay leaves, and parsley.
  4. 4. Bring to a boil, then reduce heat and simmer for 45-60 minutes.
  5. 5. Strain the broth through a strainer to remove the vegetables.
  6. 6. Use immediately or store in the fridge for up to a week.
