Ingredients 

Main Ingredients

  • 1 cup cashews
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and sauté for 1 minute.
  3. Add cashews and cook until golden brown.
  4. Add bell peppers, zucchini, and broccoli. Cook for 5-7 minutes.
  5. Stir in soy sauce, salt, and pepper. Cook for another 2-3 minutes.
