Ingredients 

Main Ingredients

  • 1 cup Couscous
  • 1 cup Vegetable broth
  • 1 Carrot, diced
  • 1 Zucchini, diced
  • 1 Red bell pepper, diced
  • 1 Onion, diced
  • 2 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • to taste Salt and pepper
  • ¼ cup Chopped fresh parsley

Instructions 

  1. 1. In a saucepan, bring the vegetable broth to a boil.
  2. 2. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. 3. In a large pan, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  4. 4. Add the carrot, zucchini, and red bell pepper. Cook until tender.
  5. 5. Stir in the ground cumin, ground coriander, salt, and pepper. Cook for another 2 minutes.
  6. 6. Fluff the couscous with a fork and add it to the pan with the vegetables. Mix well.
  7. 7. Garnish with chopped fresh parsley before serving.
