Vegetable Curry Samosas
Delicious vegan samosas filled with a spicy vegetable curry.

Filling
- 2 tablespoon Vegetable Oil
- 1 cup Onion, finely chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 1 cup Potatoes, boiled and diced
- 1 cup Peas, boiled
- 1 tablespoon Curry Powder
- 1 teaspoon Salt
- 1 teaspoon Garam Masala
- 1 teaspoon Cumin Seeds
Dough
- 2 cups All-Purpose Flour
- 1 teaspoon Salt
- 4 tablespoon Vegetable Oil
- 0.5 cup Water as needed
- Heat oil in a pan. Add cumin seeds and let them splutter. 
- Add onions, garlic, and ginger. Sauté until golden brown. 
- Add potatoes, peas, curry powder, salt, and garam masala. Cook for 5 minutes. Set aside to cool. 
- In a bowl, mix flour, salt, and oil. Add water gradually to form a dough. Knead until smooth. 
- Divide dough into small balls. Roll each ball into a thin circle. Cut in half. 
- Form a cone with each half. Fill with vegetable mixture. Seal edges with water. 
- Heat oil in a frying pan. Fry samosas until golden brown. Drain on paper towels.
