Ingredients 

Main Ingredients

  • 1 cup farro uncooked
  • 2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Cook the farro according to package instructions. Drain and let cool.
  2. In a large mixing bowl, combine the cooked farro, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
