Vegetable Filled Summer Rolls

- 8 pieces Rice paper wrappers
- 1 cup Shredded carrots
- 1 cup Cucumber, julienned
- 1 cup Red bell pepper, thinly sliced
- ½ cup Fresh mint leaves
- ½ cup Fresh cilantro leaves
- ½ cup Cooked vermicelli noodles
1. Prepare all your vegetables and herbs by cutting them into thin strips or shredding them.
2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds to soften.
3. Lay the softened wrapper flat on a cutting board. Place a small amount of each vegetable, herbs, and noodles in the center of the wrapper.
4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top.
5. Repeat with the remaining wrappers and filling ingredients.
