Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • ½ teaspoon turmeric
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon baking powder
  • Salt and pepper to taste
  • 1 cup mixed vegetables (bell peppers, spinach, tomatoes, etc.)
  • 1 tablespoon olive oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together chickpea flour, water, turmeric, garlic powder, onion powder, baking powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add mixed vegetables and sauté until tender.
  4. Pour the chickpea mixture over the vegetables in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and golden.
  6. Let it cool slightly before slicing and serving.
