Fresh basil, for garnish
Instructions
Heat oil in a large pan over medium heat.
Add onion, garlic, and ginger. Sauté until softened.
Stir in green curry paste and cook for another minute.
Pour in coconut milk and vegetable broth. Bring to a simmer.
Add bell pepper, zucchini, broccoli, and snap peas. Cook until vegetables are tender.
Stir in soy sauce and lime juice.
Garnish with fresh basil before serving.
