Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cayenne pepper
  • 1 cup okra, sliced
  • 1 can red kidney beans, drained and rinsed (15 oz)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add rice, diced tomatoes, vegetable broth, smoked paprika, thyme, and cayenne pepper. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  6. Add okra and kidney beans. Cook for another 15 minutes, or until rice is tender.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions and fresh parsley before serving.
