Ingredients 

Main Ingredients

  • 4 cups Vegetable broth
  • 4 medium Potatoes, diced
  • 2 cups Carrots, sliced
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste
  • 2 tablespoons Olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onions, garlic, and celery. Sauté until softened, about 5 minutes.
  3. 3. Add carrots and potatoes. Cook for another 5 minutes.
  4. 4. Pour in vegetable broth. Add thyme, rosemary, salt, and pepper.
  5. 5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until vegetables are tender.
  6. 6. Adjust seasoning if needed. Serve hot.
