Vegetable Loaded Potato Stew Recipe

Main Ingredients
- 4 cups Vegetable broth
- 4 medium Potatoes, diced
- 2 cups Carrots, sliced
- 1 cup Celery, chopped
- 1 cup Onion, chopped
- 3 cloves Garlic, minced
- 1 teaspoon Dried thyme
- 1 teaspoon Dried rosemary
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper to taste
- 2 tablespoons Olive oil
1. Heat olive oil in a large pot over medium heat.
2. Add onions, garlic, and celery. Sauté until softened, about 5 minutes.
3. Add carrots and potatoes. Cook for another 5 minutes.
4. Pour in vegetable broth. Add thyme, rosemary, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until vegetables are tender.
6. Adjust seasoning if needed. Serve hot.
