Ingredients 

Main Ingredients

  • 1 cup Orzo
  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Zucchini, diced
  • 1 Bell Pepper, diced
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Vegetable Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Basil, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic, sauté until translucent.
  3. 3. Add diced zucchini and bell pepper, cook for 5 minutes.
  4. 4. Stir in orzo and cook for 2 minutes.
  5. 5. Add vegetable broth, salt, and black pepper. Bring to a boil.
  6. 6. Reduce heat and simmer for 10-12 minutes, until orzo is tender.
  7. 7. Stir in cherry tomatoes and fresh basil. Serve warm.
