Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 small Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Mixed Vegetables carrots, peas, bell peppers, chopped
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 tablespoon Fresh Parsley chopped, for garnish

Instructions 

  1. 1. Heat the olive oil in a saucepan over medium heat.
  2. 2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. 3. Add the rinsed quinoa and vegetable broth to the saucepan. Bring to a boil.
  4. 4. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
  5. 5. Stir in the mixed vegetables, salt, and black pepper. Cook for an additional 5 minutes.
  6. 6. Remove from heat and let it sit for a few minutes. Fluff with a fork.
  7. 7. Garnish with chopped fresh parsley before serving.
