Ingredients 

Main Ingredients

  • 1 cup Basmati rice rinsed
  • 2 tablespoon Olive oil
  • 1 Onion chopped
  • 1 Carrot diced
  • 1 Bell pepper chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ cup Fresh parsley chopped

Instructions 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add chopped onion, diced carrot, and chopped bell pepper. Sauté until softened.
  3. Add minced garlic and cook for another minute.
  4. Add rinsed basmati rice and stir to coat with the oil and vegetables.
  5. Pour in vegetable broth, add salt and black pepper. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
  7. Fluff the rice with a fork and stir in chopped fresh parsley before serving.
