  • 1 bell pepper, sliced
  • ¼ red onion, thinly sliced
  • 1 avocado, diced
  • ¼ cup olive oil
  • 2 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and avocado.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
