Main Ingredients
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, sliced
- ¼ red onion, thinly sliced
- 1 avocado, diced
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- Salt and pepper to taste
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, and avocado.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately.
