Ingredients 

Main Ingredients

  • 4 large Potatoes peeled and chopped
  • 2 cups Carrots diced
  • 1 cup Peas
  • 1 cup Corn
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 can Baked Beans
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Peel and chop potatoes, then boil until tender.
  3. Mash potatoes with olive oil, salt, and pepper.
  4. Sauté onions and garlic in a saucepan.
  5. Add carrots, peas, corn, and baked beans to the saucepan.
  6. Pour in vegetable broth and season with thyme and rosemary.
  7. Transfer vegetable mixture to a baking dish.
  8. Spread mashed potatoes over the top.
  9. Bake for 20 minutes or until golden brown.
