Vegetable Shepherds Pie with Baked Beans Recipe

Main Ingredients
- 4 large Potatoes peeled and chopped
- 2 cups Carrots diced
- 1 cup Peas
- 1 cup Corn
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 tablespoon Olive Oil
- 1 can Baked Beans
- 1 cup Vegetable Broth
- 1 teaspoon Salt
- 0.5 teaspoon Pepper
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
Preheat oven to 375°F (190°C).
Peel and chop potatoes, then boil until tender.
Mash potatoes with olive oil, salt, and pepper.
Sauté onions and garlic in a saucepan.
Add carrots, peas, corn, and baked beans to the saucepan.
Pour in vegetable broth and season with thyme and rosemary.
Transfer vegetable mixture to a baking dish.
Spread mashed potatoes over the top.
Bake for 20 minutes or until golden brown.
