Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots chopped
  • 2 Celery Stalks chopped
  • 1 Zucchini chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 6 cups Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 2 cups Spinach fresh, chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. 2. Add the carrots, celery, and zucchini. Cook for about 5 minutes, stirring occasionally.
  3. 3. Stir in the diced tomatoes, vegetable broth, quinoa, thyme, basil, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat and let it simmer for about 20 minutes, or until the quinoa is cooked and the vegetables are tender.
  5. 5. Add the spinach and cook for another 2-3 minutes until wilted. Adjust seasoning if necessary.
  6. 6. Serve hot and enjoy!
