Vegetable Stew Recipe
A hearty and delicious vegan vegetable stew.

Main Ingredients
- 1 tablespoon Olive Oil
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 3 cups Vegetable Broth
- 2 cups Diced Tomatoes
- 2 cups Potatoes, diced
- 2 cups Carrots, sliced
- 1 cup Peas
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the vegetable broth and diced tomatoes. Bring to a boil.
Add the diced potatoes and sliced carrots. Reduce heat and simmer for 20 minutes.
Add the peas, salt, black pepper, thyme, and rosemary. Simmer for another 10 minutes.
Serve hot and enjoy!
