Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 2 cloves garlic, minced

Peanut Sauce

  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • ¼ cup water
  • ¼ teaspoon red pepper flakes (optional)

Instructions 

  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add the garlic and stir-fry for 30 seconds.
  3. Add the bell peppers, broccoli, snap peas, and carrot. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. In a mixing bowl, whisk together the peanut butter, soy sauce, maple syrup, rice vinegar, water, and red pepper flakes.
  5. Pour the peanut sauce over the vegetables and stir to coat. Cook for another 2-3 minutes until heated through.
  6. Serve hot, garnished with additional red pepper flakes if desired.
