Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 tablespoon soy sauce
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. In a large pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  4. Add bell pepper, zucchini, and broccoli. Cook until tender.
  5. Stir in cooked quinoa and soy sauce. Season with salt and pepper.
