Ingredients 

Main Ingredients

  • 1 block Tofu firm, cubed
  • 2 cups Vegetable Broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Spinach fresh
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onions, garlic, carrots, and celery. Sauté until vegetables are tender, about 5-7 minutes.
  3. 3. Pour in vegetable broth and bring to a boil.
  4. 4. Add tofu cubes and reduce heat to a simmer. Cook for 15-20 minutes.
  5. 5. Stir in spinach and cook until wilted, about 2-3 minutes.
  6. 6. Season with salt and black pepper to taste. Serve hot.
