Ingredients 

Main Ingredients

  • 1 cup Rice rinsed
  • 2 cups Water
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Mixed Vegetables carrots, peas, bell peppers
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Rinse the rice under cold water until the water runs clear.
  2. 2. In a pot, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked.
  3. 3. In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  4. 4. Add the minced garlic and mixed vegetables to the pan. Cook for 5-7 minutes until the vegetables are tender.
  5. 5. Season with salt and pepper to taste.
  6. 6. Fluff the cooked rice with a fork and add it to the pan with the vegetables. Mix well and cook for another 2-3 minutes.
  7. 7. Serve hot and enjoy!
