Vegetarian Baked Cranberry Beans Recipe

Main Ingredients
- 2 cups dried cranberry beans
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- to taste Salt and pepper
- 4 cups vegetable broth
Soak the beans overnight.
Preheat oven to 350°F (175°C).
In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
Add soaked beans, diced tomatoes, smoked paprika, oregano, salt, and pepper. Stir well.
Pour in vegetable broth and bring to a boil.
Transfer to a baking dish and bake for 45 minutes or until beans are tender.
