Vegetarian Baked Cranberry Beans Recipe
A hearty and delicious vegan dish featuring cranberry beans baked with tomatoes and spices.

Main Ingredients
- 2 cups dried cranberry beans
- 1  onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- to taste  Salt and pepper
- 4 cups vegetable broth
- Soak the beans overnight. 
- Preheat oven to 350°F (175°C). 
- In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft. 
- Add soaked beans, diced tomatoes, smoked paprika, oregano, salt, and pepper. Stir well. 
- Pour in vegetable broth and bring to a boil. 
- Transfer to a baking dish and bake for 45 minutes or until beans are tender.
