Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.25 cup chopped red onion
  • 0.25 cup chopped cilantro
  • 1 avocado sliced
  • to serve Lime wedges

Instructions 

  1. Heat olive oil in a pan over medium heat.
  2. Add chickpeas, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  3. Cook for 5-7 minutes, stirring occasionally.
  4. Warm tortillas in a separate pan or microwave.
  5. Assemble tacos with chickpeas, lettuce, tomatoes, red onion, cilantro, and avocado.
  6. Serve with lime wedges.
