Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Chickpeas cooked
  • 1 cup Diced Tomatoes canned
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper
  • 2 tablespoon Olive Oil
  • 1 cup Spinach fresh

Instructions 

  1. 1. In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  2. 2. Add rinsed quinoa and vegetable broth to the pan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. Stir in chickpeas, diced tomatoes, cumin, paprika, salt, and pepper. Cook for another 10 minutes until heated through.
  4. 4. Add fresh spinach and cook until wilted, about 2 minutes. Serve hot.
