Ingredients

  • 4 pieces Flour Tortillas
  • 1 cup Shredded Vegan Cheese
  • 1 cup Black Beans rinsed and drained
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Diced Bell Peppers
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Heat a skillet over medium heat and add olive oil.
  2. 2. Place one tortilla in the skillet and sprinkle half of the vegan cheese evenly over it.
  3. 3. Add black beans, corn, and bell peppers evenly over the cheese.
  4. 4. Sprinkle the remaining vegan cheese on top and cover with the second tortilla.
  5. 5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  6. 6. Remove from skillet, cut into wedges, and serve warm.
