Main Ingredients
- 4 bell peppers tops cut off and seeds removed
- 1 cup quinoa cooked
- 1 cup black beans rinsed and drained
- 1 cup corn frozen or canned
- 1 onion diced
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup tomato sauce
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, tomato sauce, salt, and pepper.
Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes, until the peppers are tender.
Serve hot and enjoy!
