Ingredients

  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 bell pepper chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 taco shells
  • 1 cup lettuce shredded
  • 1 avocado sliced
  • 1 lime cut into wedges

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the bell pepper and cook until softened, about 5 minutes.
  3. Add the black beans, corn, cumin, and chili powder. Cook for another 5 minutes, stirring occasionally.
  4. Warm the taco shells according to package instructions.
  5. Assemble the tacos by filling each shell with the bean mixture, then topping with lettuce, avocado, and a squeeze of lime.
