Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 cup mushrooms, sliced
  • 1 zucchini, diced
  • 1 cup spinach
  • 4 cups vegetable broth
  • 1 cup water
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots, celery, and mushrooms. Cook for 5 minutes.
  4. Pour in vegetable broth and water. Bring to a boil.
  5. Add zucchini, spinach, thyme, and rosemary. Simmer for 20 minutes.
  6. Season with salt and pepper. Serve hot.
