Veggie Soup in Mushroom Broth

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 cup mushrooms, sliced
- 1 zucchini, diced
- 1 cup spinach
- 4 cups vegetable broth
- 1 cup water
- Salt and pepper to taste
- 1 teaspoon thyme
- 1 teaspoon rosemary
Heat olive oil in a pot over medium heat.
Add onion and garlic, sauté until translucent.
Add carrots, celery, and mushrooms. Cook for 5 minutes.
Pour in vegetable broth and water. Bring to a boil.
Add zucchini, spinach, thyme, and rosemary. Simmer for 20 minutes.
Season with salt and pepper. Serve hot.
