Veggie Spring Rolls with Mango Dipping Sauce

Main Ingredients
- 8 pieces Rice paper wrappers
- 1 cup Shredded carrots
- 1 cup Shredded cabbage
- 1 cup Sliced bell peppers
- 1 cup Sliced cucumber
- 1 handful Fresh mint leaves
- 1 handful Fresh cilantro
- 1 ripe Mango, peeled and sliced
Dipping Sauce
- ¼ cup Soy sauce
- ¼ cup Rice vinegar
- 1 tablespoon Maple syrup
- 1 tablespoon Lime juice
- 1 clove Garlic, minced
- 1 teaspoon Grated ginger
Prepare all the veggies and mango.
Dip rice paper in warm water to soften.
Place veggies, mango, mint, and cilantro on the wrapper.
Roll tightly and set aside.
For the sauce, mix soy sauce, rice vinegar, maple syrup, lime juice, garlic, and ginger.
Serve rolls with dipping sauce.
