  • 2 tablespoon olive oil
  • 2 medium potatoes diced
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • 2 tablespoon soy sauce
  • 1 teaspoon ginger minced
  • 2 cloves garlic minced

Instructions 

  1. Heat olive oil in a wok over medium heat.
  2. Add diced potatoes and cook until they start to soften, about 10 minutes.
  3. Add broccoli, bell peppers, and carrots. Stir fry for another 5-7 minutes.
  4. Add soy sauce, ginger, and garlic. Cook for another 2-3 minutes, stirring frequently.
  5. Serve hot and enjoy!
