Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 avocado, sliced
  • Salsa, for serving

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add bell peppers, zucchini, and red onion. Cook until tender.
  3. Add garlic, black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
  4. Warm tortillas in a separate pan or microwave.
  5. Fill tortillas with veggie mixture, avocado slices, and salsa. Roll up and serve.
