Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup vodka
  • 1 can crushed tomatoes
  • 1 cup coconut milk
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Pour in the vodka and let it simmer until reduced by half.
  5. Add the crushed tomatoes and bring to a simmer.
  6. Stir in the coconut milk and season with salt and pepper to taste.
  7. Blend the sauce until smooth using a blender or immersion blender.
  8. Return the sauce to the saucepan and simmer for another 10 minutes.
