Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 zucchini chopped
  • 1 red onion chopped
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ¼ cup fresh parsley chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Rinse quinoa under cold water. In a pot, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
  3. Toss chopped vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  4. In a large bowl, combine cooked quinoa, roasted vegetables, balsamic vinegar, oregano, thyme, and parsley. Mix well.
