Warm Quinoa and Roasted Vegetable Salad
A hearty and healthy vegan salad with quinoa and roasted vegetables.

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 zucchini chopped
- 1 red onion chopped
- 2 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ¼ cup fresh parsley chopped
Preheat oven to 400°F (200°C).
Rinse quinoa under cold water. In a pot, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
Toss chopped vegetables with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
In a large bowl, combine cooked quinoa, roasted vegetables, balsamic vinegar, oregano, thyme, and parsley. Mix well.
