Ingredients

  • 2 tablespoon Olive Oil
  • 1 lb Mushrooms, sliced
  • 1 clove Garlic, minced
  • 6 cups Baby Spinach
  • 1 tablespoon Balsamic Vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add mushrooms and cook until tender, about 5-7 minutes.
  3. Add minced garlic and cook for another minute.
  4. Remove from heat and stir in baby spinach until wilted.
  5. Drizzle with balsamic vinegar, salt, and pepper. Toss to combine.
  6. Serve warm.
