White Bean and Kale Soup

Ingredients 

Main Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ¼ teaspoon red pepper flakes
  • 6 cups vegetable broth
  • 2 cans white beans, drained and rinsed 15 oz each
  • 1 bunch kale, stems removed and leaves chopped
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are tender, about 5-7 minutes.
  2. Stir in thyme, rosemary, and red pepper flakes. Cook for another minute.
  3. Add vegetable broth and white beans. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add kale and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
