Ingredients 

Main Ingredients

  • 2 cans white beans drained and rinsed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Add white beans, vegetable broth, thyme, and rosemary. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Use an immersion blender to blend the soup until smooth, or leave it chunky if preferred.
