Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Vegetable broth
  • 2 cans Great Northern beans, drained and rinsed
  • 1 can Diced green chilies
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • ½ teaspoon Paprika
  • ¼ teaspoon Cayenne pepper
  • 1 cup Coconut milk
  • 1 cup Frozen corn
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Pour in the vegetable broth, beans, green chilies, cumin, oregano, paprika, and cayenne pepper. Stir well.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Stir in the coconut milk and frozen corn. Cook for another 5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
