Main Ingredients
- 1 tablespoon Olive Oil
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 2 cups Vegetable Broth
- 2 cans Cannellini Beans, drained and rinsed
- 1 cup Corn
- 1 teaspoon Cumin
- 1 teaspoon Oregano
- 1 teaspoon Chili Powder
- 1 cup Coconut Milk
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in vegetable broth, cannellini beans, and corn. Stir to combine.
Add cumin, oregano, and chili powder. Stir well.
Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
Stir in coconut milk and cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
