Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove from heat and let quinoa cool.
  4. 4. In a large mixing bowl, combine cherry tomatoes, cucumber, bell pepper, and red onion.
  5. 5. Add the cooled quinoa to the vegetables.
  6. 6. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  7. 7. Pour the dressing over the salad and toss to combine.
  8. 8. Garnish with chopped parsley before serving.
