Ingredients 

Main Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Rinse the wild rice under cold water.
  2. 2. In a saucepan, heat the olive oil over medium heat.
  3. 3. Add the chopped onion and garlic, and sauté until softened.
  4. 4. Add the diced carrots and celery, and cook for another 5 minutes.
  5. 5. Stir in the wild rice, vegetable broth, thyme, salt, and pepper.
  6. 6. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender.
  7. 7. Fluff with a fork and serve warm.
