Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 6 cups Vegetable Broth
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of vegetable broth and the chopped onion. Cook until the onion is translucent, about 5 minutes.
  2. 2. Add the minced garlic, chopped carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. 3. Add the lentils, diced tomatoes, vegetable broth, thyme, rosemary, salt, and pepper. Stir to combine.
  4. 4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30-35 minutes, or until the lentils and vegetables are tender.
  5. 5. Taste and adjust seasoning if necessary. Serve hot.
