Ingredients 

Main Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 2 potatoes, peeled and chopped
  • 1 turnip, peeled and chopped
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots, parsnips, potatoes, and turnip. Cook for 5 minutes.
  4. Pour in vegetable broth, bring to a boil.
  5. Reduce heat, simmer for 30 minutes until vegetables are tender.
  6. Season with salt and pepper.
  7. Blend soup until smooth or desired consistency.
  8. Garnish with fresh parsley before serving.
