Winter Root Vegetable Soup Recipe
A hearty and warming vegan soup perfect for winter.

Main Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 2 potatoes, peeled and chopped
- 1 turnip, peeled and chopped
- 1 liter vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until soft.
Add carrots, parsnips, potatoes, and turnip. Cook for 5 minutes.
Pour in vegetable broth, bring to a boil.
Reduce heat, simmer for 30 minutes until vegetables are tender.
Season with salt and pepper.
Blend soup until smooth or desired consistency.
Garnish with fresh parsley before serving.
