Winter Vegetable Hash Recipe
A hearty and warming vegan dish perfect for cold winter days.

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 cups sweet potatoes, peeled and diced
- 2 cups Brussels sprouts, halved
- 1 cup carrots, diced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon fresh thyme, chopped
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the sweet potatoes, Brussels sprouts, and carrots. Cook, stirring occasionally, until the vegetables are tender and slightly browned, about 20 minutes.
Season with salt, black pepper, and paprika. Stir in the fresh thyme and cook for another 2-3 minutes.
Serve hot and enjoy!
