Ingredients 

Main Ingredients

  • 4 cups Yellow squash, sliced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Bread crumbs Use vegan bread crumbs
  • ½ cup Vegan cheese, shredded
  • 1 cup Unsweetened almond milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced yellow squash, chopped onion, and minced garlic.
  3. Add the bread crumbs, vegan cheese, almond milk, olive oil, salt, and black pepper. Mix well.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is heated through.
  6. Remove from the oven and let it cool for a few minutes before serving.
